This study aims to answer the research question: What health behaviors and other factors affect diet and contribute to disproportionately high rates of gastrointestinal cancer in Appalachian Eastern Kentucky? Gastrointestinal cancers and nutrition are closely linked, and certain eating habits increase the risk of these diseases. These patterns are even more complicated in Appalachia, where environmental and social challenges shape how people eat and live.
